2019 saw us travel around Europe for our Thursday evening themed events. From Tuscan to Basque to Greek the evenings offered a range of different cuisine. We finished the year off on a high with a Basque night. The evening offered our take on food from Bilbao, San Sebastian and other northern Spanish regions.
Northern Spanish food is all about the produce, punchy dishes powered by quality ingredients. The Basque dining scene is influenced by the abundance of produce from the sea on one side and the fertile Ebro valley on the other.
In this region, they eat in a relaxed tapas-style, moving from bar to bar as the evening goes on. Each bar will offer what they call “Pintxos”. These pintxos dishes are a small plate packed with flavour. Ranging from a croquette to seafood each place will offer only its finest dish.
Our chefs got to work on a menu which would truly reflect the Basque culture but of course with a Little Seeds twist. The evening kicked off pintxos style with Gilda a traditional dish consisting of Gordial olive, Padron pepper and anchovy on a stick. Served alongside this, wild mushrooms with confit egg yolk, our own version of pintxos, using a Staffordshire copper Maran egg yolk and house-made bread for croutons.
The menu then transitioned onto a traditional tortilla served with an isle of white tomato salad. The main course offerings of Hake and slow-cooked beef cheeks. For dessert was “Torrijas” a sweet cinnamon and orange toast served with crème Fraiche. This is a French toast given a Spanish twist with the orange and cinnamon. The evening concluded with “Pastel Vasco” a Basque version of a custard tart. It has a crispy pastry base filled with custard and topped with a lemon and cherry jam. This jam was made using cherries preserved from the summer and lemon verbena from our kitchen garden.
After the popularity of this years themed nights we will be resuming them in the new year. Keeping with the regularity of 1 per month on a Thursday evening. We will kickstart the year with a Burn's night menu on Thursday 23rd January.
